Country Fried Steak

I made country fried steak tonight. I was not happy with how my past attempts have turned out. It would over done and not have much flavor. I used the Pioneer Women's recipe. What a difference it made. She double dips her cubed steak and adds paprika, seasoned salt, and pepper to her recipe. It is definitely a make again. 1 1/2 cups whole milk 2 large eggs 2 cups all-purpose flour 2 teaspoons seasoned salt Freshly ground black pepper 3/4 teaspoon paprika 1/4 teaspoon cayenne pepper 3 pounds cube steak (tenderized round steak that's been extra tenderized) Kosher salt 1/2 cup canola or vegetable oil 1 tablespoon butter Gravy: 1/3 cup all-purpose flour 3 to 4 cups whole milk 1/2 teaspoon seasoned salt Freshly ground black pepper Mashed potatoes, for serving Read more at: http://www.foodnetwork.com/recipes/ree-drummond/chicken-fried-steak-with-gravy-recipe.html?oc=linkback

Enchilada Casserole

Enchilada Casserole Recipe   

I found this recipe on Taste of Home.com but embellished it.
Ingredients:

  • 1 pound ground turkey or beef (90% lean)
  • 1 can (10 ounces) enchilada sauce
  • 1 cup salsa
  • 6 flour tortillas (10 inch)
  • 2 cups fresh or frozen corn
  • 4 cups (16 ounces) shredded cheddar cheese

    When cooking the turkey, I added an onion and 2 mini sweet peppers.
    add enchilada sauce and 1/2 cup vs. one cup salsa. I felt this recipe worked better in a pie dish.  Layer in a pie dish one tortilla than 1/2 the turkey mixture.  Add corn and black olives on top, than add cheese.  Add another tortilla and the rest of the turkey mixture, corn, black olives, and cheese.  Add one last tortilla and cheese.  Bake at 350 for 20-25 minutes.  Your done.
